The Matisse is an expression of my life in France and of the white wines that I love. It’s made in the Burgundian tradition using barrel fermentation and “bâtonnage” (stirring the lees). It’s full-bodied and has an elegant finish. À votre santé!

Tasting Notes
This is made in the Burgundian style. Fermented in French oak and aged on the gross lees using b√Ętonage. Intense fruit on the nose with wild pear and tropical notes. Beautiful acidity and a smooth finish.
Food Pairing Notes
Spicy Thai or Hunan-style dishes are terrific with this one. I also like it with a sesame chicken salad. My favorite pairing is with baked salmon spiced with olive oil, garlic, and cumin.
